Craft Beer Menu
1st Course - Salmon
Butter-Kolsch poached salmon rillettes, sea salt-sorghum cured gravlax, pickled hop shoots, cracked pepper-thyme lavash cracker paired with Kellerbier Kölsch (4.4% ABV), our 2011 Great American Beer Festival® Gold Medal award-winning beer. This is an unfiltered version of our Kölsch served cellar style like a German brewer might enjoy directly from the lager tank.
2nd Course - Burrata
Creamy cheese wrapped in fresh mozzarella, grilled citrus marinated endive, shaved olli berkshire prosciutto speck, country bread tuile paired with English Summer Ale (5.2% ABV), our 2011 Great American Beer Festival® Bronze Medal award-winning beer. The golden hued, light malt accented brew is made with English pale and German pilsner malts and then lightly hopped with American Citra hops.
3rd Course - Duck, Duck, Goose
Pan seared, ham-bock brined duck breast, apple-hazelnut duck sausage, foie gras potato puree, elixir gastrique paired with the Elixir Maibock (6.5%), our 2012 Great American Beer Festival® Silver Medal award-winning. Pilsner, Vienna and dark Munich malts balanced by Tettnanger hops give this beer its toasty nose, smooth yet crisp character and a late, dry finish.
4th Course - Porchetta
Our version of the classic Italian pork roulade. Pork tenderloin wrapped with Virginia country ham, mustard, pork belly, slow roasted over aromatic vegetables. served over broccoli rabe with an apple cider pan jus and paired with Molotov Hoptail (8.6% ABV). An East Coast style of imperial IPA where malt body and sweetness can be discerned with a heavy hand on hop character. Loads of Centennial and Columbus hops are used along with cascade hop oil.
5th Course - Ricotta Cheesecake
Housemade ricotta cheese, almond crust, orange peel-fig jam, whipped cream is paired with our newest beer, Leonidas Batch 300 (8% ABV). This English pale and crystal malts melded with German cara-wheat, carafe and munich malts form a solid malt backbone. The kettle addition of hops are 100% American bred Citra hops followed by a dry hopping with citra and another simcoe varietal to lend a piney, citrusy hop character to the juicy malt flavor.
